Sausage with Rice & Vegetables
For this meal I totally cheated and bought the pre-packaged sausages from one of my favorite grocery stores. This meal you can cook in less than 20 minutes!
- 1 cup zucchini
- 1 cup rice
- 1 cup corn uncooked or frozen
- 1 cup mushrooms
- 1 cup carrots
- 1 package of 4 sausages flavored and pre cooked
- 2 tb avocado oil
- 1 tsp black pepper
- 1 tsp of garlic powder
Cook up the rice as directed on the box. Chop up the vegetables in a bite size pieces. In a large pan, heat up the avocado oil and add in all the vegetables. Sautee them until you can put a fork through them. Put the vegetable mix on the bed of rice and serve with a side salad.
