Chicken Cacciatore is great to make when you have a busy work week! This dish is a hit with the kids because all kids seem to like pasta. This meal you can re-heat or have for left overs for lunch. I don’t recommend freezing this recipe as it get freezer burned easily and doesn’t taste good when re-heated from the freezer.
- 1 cup flour
- 1 tsp black pepper
- 2 chicken breasts cut into cubes
- 4 tb avocado oil
- 1 medium yellow onion
- 3 whole garlic cloves
- 1 tsp herbes de province
- 3/4 cup chicken broth
- 1 can diced tomatoes (undrained)
- 1 tsp dried red peppers
- 1 cup parmesan cheese
Put the cut chicken breast inside a ziplock bag with the pepper and flour. Shake up the bag.
In a large pan, add the avocado oil and yellow onion and sauté it. Add the chicken to the pan. Brown the meat. Once it is almost browned, add the rest of the ingredients. Put a lid on it and simmer on low for abut 10-15 minutes.
I always use spaghetti noodles with this recipe. I put the chicken on top with some parmesan cheese. (Hint: If you are re-heating this for later, then put it in an oven safe dish to heat up.)
