It is Girl Scout season and of course I had to make up some yummy recipes with their cookies. My daughter is a Girl Scout and has started selling cookies. Here is the link, in case you want to order! We can ship to your location.
Since I literally have a hundred boxes sitting on my kitchen table, I thought I would take our favorite cookies and make this first recipe. I basically substituted the graham cracker crust for the Trefoils cookies crust. It made my cheesecake even better!

Girl Scouts Trefoil Cheesecake
Ingredients
- 3 tb sugar
- 1 box Girl Scouts Trefoil cookies
- 1/3 cup butter
- 4 8oz packages of cream cheese
- 3 eggs
- 1 tsp vanilla extract

Preheat oven to 325 degrees

To make the crust, mix the Trefoil cookies, 3 tb sugar and 1/3 cup butter in a bowl and then put in a greased pie dish. Smash it down flat in the pie dish. Set aside.

Next mix up the cream cheese, 1 cup sugar and vanilla with mixer until well blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.

Put the cheesecake in the oven for about 50-60 minutes. Once it is baked, put it in the fridge to serve cool.
