Breaded Lemon Crusted Chicken
- 1 cup Italian bread crumbs
- 4 chicken breasts
- 1 cup Parmesan cheese
- 1 lemon
- 2 tb avocado oil
- 2 eggs
- 1/2 cup milk
Pre-heat oven to 400 degrees. Next, put bread crumbs on one plate, mix the eggs and milk and put it on another plate.
Clean your lemon with soap and water to wipe off the access dirt and germs. Then zest your lemon onto a plate. Cut HALF the lemon into 4 slices. You will add it to the top of each chicken breast. (The other half of the lemon you will use to juice the tops of the chicken.)
Take a frying pan and coat it with avocado oil. Put stove on high.
Next take the chicken breast and put the chicken in the egg and milk mixture and then coat it with the bread crumbs. Once the chicken is coated put it in the pan. Repeat these steps.
Brown the chicken on both sides for about 2-3 minutes on each side. Transfer the chicken to a baking pan. Top the chicken with lemon zest, juice and Parmesan cheese and put it in the over for about 20-30 minutes.
The kids had after school activities today so I knew I had zero time when we got home to make dinner. This meal is great for when you have a late activity and need to be able to pop it into the oven when you get home. I made up this recipe as I went along making it so I am happy it turned out yummy. My daughter (who is not a chicken lover) said this is the only style chicken she will eat. How is that for a review?!
