Twice Baked Potatoes
- 6 large russet (brown potatoes)
- 3 tb garlic powder
- 2 cups cheddar cheese
- 1/2 cup sour cream
- 1/2 cup cream cheese
- 1/4 cup milk
- 4 tb butter
- 1 tsp pepper
- 1/2 tsp salt (not really needed but you may add for taste)
First, you need to bake the potatoes. I usually do this in the microwave. It is quicker. When you are ready to put them in the oven OR microwave, be sure to poke them with holes with a fork. The potato could explode if you do not do this.
If you put the potatoes in the microwave, it usually takes about 15-20 minutes. If you put in a 400 degree oven, it takes an hour or more.
One you are able to poke the potato really easily, they are done. Cut each potato in half (the LONG WAY). You want to create a long boat for them.
Take out the inside of the potato and put in a pot. Next add, milk, butter, cream cheese, sour cream, pepper, garlic and salt to the pot. Put the burner on medium and keep mashing and stirring the potatoes until they get to the consistency you like.
Next, line up the peels of the potatoes on a baking sheet. Add the potato mixture in each “boat.” Add cheese on top. Cover with foil for about 20-30 minute in a 400 degree oven. Serve hot.
This is a labor of love type of meal. You can have this alone or as a side with a nice big steak.
