Summer is heating up! The coolest lunch or dinner to make is a salad. So, I start a mini salad bar for my family. It is a form of meal prepping. I hate to chop up vegetables every night so now I do it in bulk. The wonderful thing about salad is anything goes! Chop up the vegetables and then stick them into containers. I love to add proteins such as shrimp, chicken and eggs. They fill you up and make the salad a little more interesting!
