I am getting ready for Christmas in October! If you know me well, this is no shock. I made home-made Luxardo Maraschino cherries for the first time. Let’s just say this was easy but NOT quick! My lovely husband did the grocery shopping this week and I told him to buy a bag or two of cherries. Well, he thought that the cherries were such a great deal at $4.50 per bag. Since he is not a regular shopping for fruit, he decided to buy almost $50 worth cherries not realizing it was $4.50 per POUND. Oh, I love him.
I used 4 pounds of cherries and made seven 12 oz jars of home-made Luxardo Maraschino cherries. I canned them all, so if you are my BFF by Christmas, you will get a jar for Christmas! I used Grade A vanilla beans (yes, there is a HUGE price difference). Check out your online store for this.
Home-Made Luxardo Maraschino Cherries
- 2 cups white sugar
- 5 sticks of Grade A vanilla bean
- 4 sticks of cinnamon
- 2 cups water
- 4 cups Luxardo cherry liquor
- 4 pound cherries (pitted)
- 1 cup freshly squeezed lemon juice
First, remove the pits from the cherries. Set them aside.
In a large pot, add the ingredients in EXCEPT the cherries and liquor. Bring to a slight boil and stir.
Then add the cherries and Luxardo liquor and let it simmer in the pot until the cherries are a little tender.
Set it aside and let the cherries cool.
If you are going to can this (which I hope you would), then break out the jars and get ready to can!
