Grab a big pot for this one! First coat the pan with olive oil. Then add the chicken, bell pepper, yellow onion, and celery. Cook until the chicken's center is slightly pink.
Next add the rest of the ingredients and stir well (except the cooked shrimp and sausage). At this moment, you can choose to put all in a crock pot or leave in your big pot. If you are not going to be near your stove for a few hours, add all the ingredients to your crock pot.
Leave it on simmer if you are planning on leaving it on the stove for 2-3 hours. Add the shrimp and sausage 30 minutes before serving. If you are putting it in a crock pot, put on low for 4 hours and add the shrimp and sausage about an hour before serving.
When I took a picture of this, I showed it with just soup. If I were to re-shoot the picture I would show it over rice. It is really good served over rice!
