Chicken Enchiladas


  • 3 tb olive oil
  • 4 chopped chicken breast
  • 1 cup sour cream
  • 1 cup cheese
  • 1 can green chilis pepper (you can choose any type)
  • 10 tortillas
  • 1 can enchilada sauce


  1. Pre-heat oven to 350 degrees

  2. Pour olive oil in pan and brown the chicken. Once the chicken is almost cooked all the way through, remove it from the heat and add to a mixing bowl.

  3. Add the chili pepper and sour cream to the chicken in the bowl.

  4. Next, fill each tortilla with the filling and roll up like a burrito and line it up in a long baking dish.

  5. Add enchilada sauce on top of the tortillas and add cheese. Cover with foil and bake for 30 minutes.
